Happy Monday, friends!
Today, my kiddos are home from school in honor of Veteran’s Day later this week. We’ve been talking a lot lately about serving our country and the different ways you and your family can do that, and it always brings me back to this guy here…
…my 95 year old grandpa who is a US Marine and proudly served during World War II. If you or your spouse are serving or have served, please know from the bottom of my heart how thankful I am for your/their service to our country. Thank you. Truly, I am so thankful for all of you who serve.
Since my kiddos are home now, I’m going to keep things to one post today. Mmmmm…my Beef & Rice Skillet Supper is like the perfect meal for me. I love it when everything is cooked together on the skillet and topped with cheese. Add a salad and you’re good to go!
My Quick Cajun Pasta is just what your Hump Day calls for!
I love walking in the door after sports/dance/speech and my house smelling like stew. My Cowboy Stew is so simple, so delish and perfect for November!
And finish off your week with my Bacon & Pumpkin Pasta! I love, love, love pumpkin in a savory dish!
For either breakfast or dessert this week, you should try my Pecan Streusel Cinnamon Rolls. All you need is a cup of coffee and you’ll be in heaven!

I never thought to use pumpkin in a savory dish until I found your blog. Since then, your pumpkin pasta and soup are in my fall rotation! My husband was the same way with pumpkin and he loves both dishes as well!

Yes! Make sure your chicken is poached and shredded and then you can make it stovetop!
