First of all, this is my 400th Meal Planning Monday!
4-0-0-th!
That’s 400 weeks of sharing meal plans with you guys to hopefully help make your week and your life simpler (and tastier!).
I mean, I’m actually chuckling because that’s a lot of meal planning.
Second of all, it’s THANKSGIVING WEEK!!
We are so excited over here because the kids are home from school, Andrew and I are taking off work and we have family coming into town tonight. It’s going to be a FABULOUS WEEK! I will be here blogging along with you all week and sharing life on Instagram, but in the meantime, if you’re looking for a few easy recipes to kick off your holiday week, I have it here.

On Monday, make a double batch of Andrea’s Pulled Pork. You’re eating sandwiches tonight and then tomorrow night…
…you’ll use the leftovers to add to my Pulled Pork Chili! I am serious when I tell you that once you make this version, you will have a HARD time going back to basic chili.
We’re going super simple on Wednesday night with my one of Smith’s very favorite suppers! It’s my Grilled Chicken & Onion Sliders!

What is your go to simple side salad to serve along with dinner? Even thanksgiving? Thanks!
Also, I know you prefer to run…but do you ever use your peloton bike? I’m thinking of getting one to cross train all the running! And it’s so cold!!

It varies but we usually use romaine as the base and then add a little Parm, bleu or goat cheese, we love adding pistachios for crunch, red onion, halved cherry tomatoes, pepperoncini, avocado…whatever is in the fridge. I use the Peloton on rainy days and/or really cold days. Andrew uses it consistently throughout the year, but I wait until I cannot be outside to use it.

Lately, I’ve been using a little Ranch and Buffalo sauce on everything for some spice. My go-to though is normally just olive oil and some Balsamic vinegar. Sometimes, I’ll add some Dijon mustard in there and whisk it together too!
