Hello and Happy MONDAY!
You guys, it’s our first meal plan of MAY!
This week, I decided to take five dinner recipes from our 31 MAY MEALS for our meal plan 🙂 .
May is officially the time of year to bring out the fresh ingredients, fire up the grill, dine on the patio, and enjoy all the seasonal fare we don’t typically eat during the colder months.
As much as I love cozy, hearty, cold weather suppers, there is something magical about eating lighter food outside on a gorgeous May night.
Whether you take today’s meal plan or grab a recipe or two from our 31 MAY MEALS, here’s hoping your dinners are simple, delicious, and very May.
Enjoy! xx

Start your week with my Fresh Corn, Sausage & Parm Pasta! Corn + Parm + Sausage is one of my very favorite combinations!

On Taco Tuesday, try my Chili Lime Tacos with a simple salsa! We buy frozen shrimp (typically from Trader Joe’s) which makes this recipe super simple. The salsa is easy, but let’s be real, you can always use store bought too.

If you’re not making sheet tray suppers, you are missing out. Not only are these so simple to prepare, but they’re EXTRA easy to clean up afterwards too! This week, try my Lemon Chicken & Chickpea sheet tray supper!

Don’t be intimidated by making crab cakes. They are really really easy to put together at home, AND you can use lump fresh or the canned variety. My Crispy Crab Cake Sliders can be made in no time.
This time of year, we always end the week with…

…a burger recipe! My Bacon & Bleu Burgers are absolutely one of my faves! Delicious!
If you need another easy dinner recipe or a brunch idea…

…try my Bacon & Crouton Breakfast Casserole! You can whip this up for a simple supper (just pair it with a green salad) or make it ahead and serve it on a Saturday morning.
Speaking of which…

…my White Chocolate Raspberry Muffins are great for breakfast and brunch or as an afternoon treat. These are so simple, y’all!
Cheers to the first week of May! Happy Meal Planning! xx
