It’s SPRING!
I love “spring” food so much!
Okay, I really love “fall” food, but come this time of year, I get into spring-y food too 🙂 .
I hope this week’s new Meal Planning Monday puts a spring in your step as you head to the grocery store!
Happy Monday, friends! xo
Whether you have frozen salmon or fresh, you can whip this up with very few ingredients. My Salmon with Avocado Chive Mash is really easy and delish too!
Mmmmm! Have you made my King Ranch Chicken Soup yet? It’s a lighter, simpler version of the original. Your family will love it!
My Easy Weeknight BLT Pasta is exactly what your Wednesday needs this week! This is a guaranteed family favorite!
Our family loves crab cakes!! My kids even love crab cakes, and it’s easy to tweak for gluten-free meals as well. If you don’t have breadcrumbs or panko, you can always make your own with crushed crackers or even tortilla chips!
Finally this week, whip up a Sheet Tray Supper! I have so many varieties HERE like this Sausage, Sweet Potatoes & Brussels Sprouts!
Do you know what a Hummingbird Cake is? In the South, it’s a staple in the spring. You will not find a more moist cake than this. Promise.
And a light little breakfast for your spring morning? My Dutch Baby Pancake. There is just a tiny bit of lemon in there that takes this easy dessert to a extra yummy level.
That wraps up Meal Planning Monday.
See you tomorrow! xx

I’m trying to work fish into our weekly meal plan – and that avocado mash looks so yummy! Putting that on the calendar for Friday 🙂

Coming back to say – that avocado mash/salmon combination is perfect! Everyone in the family was happy with this dinner 🙂 We usually buy from Trader Joes, but our local grocery had ‘farmed in Canada’ salmon and it was great.

Awwwwww! Yay!!!! Thank YOU!

What salmon do you buy? frozen or fresh? Farm raised vs wild? I never know what to get!:)

It varies depending on where I am and what looks best. Often, the frozen salmon from Trader Joe’s works just fine. Andrew prefers the wild salmon that our local grocery store sells.
