You guys, it’s BACK TO SCHOOL WEEK!!!
Today is our family’s last non-school night as we head back on Wednesday morning.
This is always such a bittersweet week. Tonight is “meet the teacher” at both schools, and there is a certain excitement about new classes, new teachers, new school supplies…but then there is also the sadness that our lazy/easy/no strict schedule season is over. This mama currently has all the feels!
Each year, we typically eat the same favorite meals the first week of school. They’re all simple to make and remind the Shull family of the start of a new school year. I really think your family will love this menu too!

I know I share this Simple Sausage, Peppers & Onions recipe all the time, but my kids LOVE it!! I have started doubling the recipe because my people eat so much. Try it this week too!
Every year on the first day of school, we eat lasagna, and this year will be the same! Whether your family needs a gf version like THIS ONE or not, all you have to do is simply substitute the noodles. Easy as that!
My Easy Weeknight Wiener Schnitzel is one of my kids very, very, very favorite dinners!! It’s the perfect meal to kick off back to school!
Finally, wrap up your week with my Sloppy Joe Bowls! They’re one of my family’s favorite meals to kick off the school year!

We always make my Maple Sausage Balls on the first day of school for breakfast!! Friends, they’re so good! They can also be made in advance too!

I have!!!!! I find that our air fryer is a little small for the schnitzel, so I tend to make it in the oven, but yes!!

Oh my…..Happy Back to School week! Teacher here from NY and we don’t go back until the beginning of September but I’m definitely feeling all the feels! Trying to savor these last few weeks with my kiddos. Love your back to school meals each year and look forward to using my slow cooker more! Good luck this week!

I think I read that your kids take a little teacher gift the first day?? Do your older kids still do that or did you have a grade you stopped?

We stopped after elementary school. They give gifts throughout the year (holidays, teacher appreciation, etc), but not on the first day.

I stopped in middle school for the first day. The first day is a little too chaotic for them to carry that much on top of all the things they have to bring for their regular locker, orchestra locker, and athletics locker. We wait and gift them at the holidays and teacher appreciation later in the year instead.
