Happy happy Monday!
Andrew left yesterday to snowboard with a big group of men from our church, so while he’s gone, it’s going to be all about what the kids want for dinner. I don’t know about you, but nothing makes me happier than to see my kids excited about dinner. I picked a few of their faves for this week’s meal plan incase you need an easy and delicious dinner idea too.

My CHICKEN & MUSHROOM FRIED RICE is probably my kids’ current favorite supper. All four of them devour it! Sometimes, if we don’t have mushrooms, we’ll add in other veggies like sugar snap peas, broccoli or even shredded carrots. It’s so easy and always a winner!
Another huge family fave is my SIMPLE SAUSAGE PEPPERS & ONIONS. You guys, this one is crazy easy! I’ve made this a million times over the years!
If you’ve never made a quiche for dinner before, try my BACON & BROCCOLI QUICHE! I love making this because I can do it in advance and just pop it in the oven right before we eat.
SLOPPY JOE BOWLS because…YES! This checks all of their boxes!
Anytime we have something special at our house, my kids ask for this LASAGNA. We had it this year on Christmas Day, we had it a few weeks ago for Smith’s birthday…it’s our first day of school dinner and sometimes, a random weeknight fave. It’s so easy, friends. So easy!
Finally, if you want a little way to make your family’s weekday breakfast a bit sweet, try my SWEET HEART WAFFLES 🙂 .
