I hope you had a wonderful weekend. On this Groundhog Day, I have five simple suppers and one Valentine’s inspired breakfast for your wintery week.
They’re easy, they’re cozy, and they’re best served while wearing fuzzy socks and binge watching Netflix shows.

My CHICKEN & MUSHROOM FRIED RICE is always on rotation at our house. All four of my kiddos devour it! Sometimes, if we don’t have mushrooms, we’ll add in other veggies like sugar snap peas, broccoli or even shredded carrots. It’s so easy and always a winner!

Another huge family fave is my SIMPLE SAUSAGE PEPPERS & ONIONS. I just made this one on Wednesday night for the 5000th time. You guys, this one is crazy easy!

If you’ve never made a quiche for dinner before, try my BACON & BROCCOLI QUICHE! I love making this because I can do it in advance and just pop it in the oven right before we eat. Growing up, my mom always served quiche at dinner alongside a big green salad. Simple and delish.

SLOPPY JOE BOWLS because…YES! Easy and so good!

Anytime we have something special at our house, my kids ask for this LASAGNA. We had it this year on Christmas Day, we had it a few weeks ago for Smith’s birthday…it’s our first day of school dinner and sometimes, a random weeknight fave. It’s so easy, friends. So easy! Of course, use “regular” noodles and it doesn’t have to be g-free 😉 .

Finally, if you want a little way to make your family’s weekday breakfast a bit sweet, try my SWEET HEART WAFFLES. They are the perfect February breakfast bite.
