
Happy happy Monday, friends!
You guys, we are disembarking from a cruise ship this morning in Florida and heading back home.
Needless to say, I’m going to need a meal plan later this afternoon when I’m looking in my pantry and fridge and trying to come up with something to make for dinner.

My CHICKEN AND BROCCOLI FRIED RICE for the win this Monday! This is a very regular recipe at our house.

On Taco Tuesday, whip up my TACO MEATBALLS OVER AVOCADO MASH. So simple and so delish!

Speaking of simple, every time I make this SWEET POTATO & SAUSAGE HASH, I wonder why I don’t do it more often. It’s not only simple, it’s so yummy too! My family loves this with extra eggs on top (but you can certainly omit them if that’s not your family’s jam).

Our air fryer LIME PEPPER CHICKEN can also be baked in the oven (at 350 degrees for about 30 minutes). This one is so flavorful!

Wrap up your week with my BREAKFAST BURGERS! These are a really big hit at my house!

I love, love, love this ROASTED BROCCOLI SALAD! If you haven’t tried it before, now is the time!

And finally, my PINEAPPLE PECAN CUPCAKES could not be simpler. Omit the frosting and you have yourself a yummy muffin 🙂 .
