Today, I have five simple suppers plus one dessert that’s perfect for the summer.
Grab your pen, paper and coffee and get to writing down your grocery list. We’re making everything extra delicious this week starting with…
…my LOBSTER ROLLS! Believe it or not, they’re really easy to whip up…even on a weeknight (and you can totally sub with crab meat too!)!

For Taco Tuesday, you should try my TACO TORTELLINI SKILLET…because no matter what the season is, sometimes, I just need a good pasta supper.
My PINEAPPLE GRILLED SHRIMP is quick and delicious…the perfect combo for a summer weeknight!

Especially during the summer, AIR FRYER CRAB CAKES should be on repeat! You can certainly bake them in the oven too at 375 degrees for about 18 minutes if you don’t have an air fryer.
And finish off your week with BACON WRAPPED FILETS! Sounds kind of fancy…but it’s easy!

…you need to try my CRISPY PROSCIUTTO AND MELON SALAD. I could eat this every single day. It’s very very summery.

Thanks for these ideas! Quick question, are these things you would make without Andrew? I solo parent mostly each week while my hubby travels for work, and I am always trying to come up with easy dinner ideas for me and my girls. Curious what those night look like for you!

I don’t make dinner very often without Andrew, so I’m typically always thinking about our complete family when making my meal plans. The truth is that on the rare occasions when Andrew isn’t home for dinner, my cooking gets suuuuuper lazy. For example, one night last week, I “made” dinner and by that, I mean, I heated up Trader Joe’s fried rice, Trader Joe’s orange chicken and made a salad.

Question – I made the crab cakes using your original recipe (from 2020) – we thought they were a tad dry – do you ever dip them in any type of sauce? We made them as an appetizer.
