I mean…right out of the gate, something SO SIMPLE! My Sheet Tray Supper of Sausage, Potatoes & Veggies has been a huge hit, so you must try it too! Seriously, the easiest part about your Monday will be this supper.
Before the weather warms up too much, I have to get a few more cozy recipes into my menu for the week. My Chicken Pot Pie is one of my very favorite suppers to make. It’s just a big bowl of cozy.
Speaking of cozy…my Beef & Mushroom Ragu over Pasta is the perfect meal to hunker down with on hump day.
This Bacon & Spinach Quiche recipe is one of Manda’s 🙂 . Growing up, my mama made quiche on a regular basis for supper (always served with a green salad) and now, so do I. Such a staple at our house!
And this recipe of mine is an oldie but a goodie (it was one of the very first recipes that I posted five years ago!). My Chicken Fajita Soup is one of those yummy soups that’s warm and hearty but not too rich for a March evening. Tons of flavor, not too much heat (so very family-friendly!).

…my green pancakes for St. Paddy’s Day. We make them every year and they’re always a hit 🙂 .
