Happy happy Monday, friends!
Okay…we had so much fun this weekend that I only blogged one post today. We had family in town, we swam, we celebrated the Slaughters adoption with a framily dinner…we enjoyed our weekend. So, sorry about that. Check back tomorrow for two posts 😉 . In the meantime, grab a cup of coffee, pad and pen and jot down your meals for the week. I have five simple suppers, dessert and lunch all ready and waiting on you.

If you want to kick off your week with a meatless Monday, then make my Vegetarian Enchiladas! All the flavor to fill you up without the meat.
So…your supper will not be another boring chicken dinner if you make my Honey Pecan Chicken Thighs. TRUST ME! If your family isn’t into dark meat, we have made this with chicken breasts too, so totally feel free to swap. Loads of texture and flavor!
Fire up the grill and make my Chipotle Fish Tacos. These are mild enough for kids but flavorful enough for a grownup’s palate.
Make boring ground turkey way more fun this Thursday with my Green Chile Turkey over Quinoa!
And finish off your week with my Mushroom Burgers. Red onions, mushrooms, and Gruyere cheese…YUM!
Looking for something sweet to make this week? How about my Pink Lemonade Bars? They’re not only pretty but they’re really yummy too! A little sweet, a little tart, a whole lot of perfect.
And if you want a fun little lunch this week, make my Bleu Cheese & Cranberry Pasta Salad. I could eat this every day. It’s full of delicious flavors and lots of texture.
Okay…I’m off now to do some laundry. Hope your Monday is more exciting than that ;).

I just made the Pasta dish! So yummy! I used zoodles instead of pasta for lower carb. Love your recipes!
