It’s Meal Planning Monday!
Guess what I’m having for dinner this week? Nothing I’m making! 🙂
We left for our summer vacation last Thursday and as of today, are on a big ship outside of Alaska. We’re having the best time and because of that, this will be my one and only post until I return. There are 18 of us together and I want to spend as much time as I can focusing on my sweet family. I hope you guys have a great week!! Here’s a simple little menu for today and then after this…I’ll catch you when I return. Sending you so much love from my family to yours!!

Right out of the gate…my Grilled Shrimp Tacos. We cannot eat enough shrimp in our house. Or avocado. So, this kind of a meal is most definitely a winner!
My Quick Chicken Stir Fry is just that…a quick chicken stir fry. You’ll have this one whipped up in minutes!
Chicken Caesar Rice Bowls will get you through hump day! The key is to poach your chicken all day in the slow cooker so that when you’re ready to assemble, it’s done. You can also use a rotisserie chicken instead! This meal comes together in minutes!
Last week, I shared my recipe for Grilled Cod with Avocado Pea Mash. It’s full of flavor and quick, quick, quick to whip up!
I’m basically obsessed with any recipe that includes corn, so my Sweet Corn Topped Burgers is exactly what I think you should make this Friday night. These babies are delish!
In June, we eat peaches here in Texas, so my Peach Pie is our dessert of the week. I could live off of pie. It’s my absolute favorite dessert!
Want to try something new for breakfast this week? My Raspberry Lemon Rolls are quick to make and always gone in seconds.
