wondering if this could be made ahead of time and if so, how far ahead- thinking of assembling Christmas Eve morning, and then baking of Christmas morning, but not sure how that will work out with the frozen hash browns?

Yes! I always make my breakfast casseroles at least a day in advance and then bake them off that morning!
