Happy Monday!
I don’t know about you…but we’re back in that “quick suppers after school before other activities” mode. We’re eating them either before everyone goes off to their stuff or later at night when everyone is done. I love sitting around the table with my peeps and listening to everyone’s “highs and lows” from the day. Here’s hoping one of your highs this week is my easy meal plan.

My friend Kelly shared this recipe with me a few years ago and now, it’s a staple at our house. If you think enchiladas are too tricky for weeknights, then you haven’t made these enchiladas. They are on the table in minutes and so yummy too!
My Beef & Ale Pie is filled with everything yummy…onions, peas, stew meat…it’s delish!
Corn & Chicken Quesadillas make Friday night easy! All you need is some sour cream and guacamole and dinner is done!
I always think of peanut butter when I think of back to school. You need to try my Peanut Butter Crumb Bars! They are perfect with a glass of cold milk.
Speaking of back to school…is it apple season yet? If you’re already in the apple mood, whip up my Apple Cinnamon Muffins. They taste like the start of fall.

Have you done a post on how you organize all of your recipes/cookbooks? And how you then decide what to plan for each week? And if there is any method to the rotation or you just randomly pick? Interested how you keep all of this so organized 🙂

I don’t think I have. I have a calendar just for what I’m cooking (what new recipes I’m writing for my blog). I make notes on my phone and in a spiral notebook of ideas and that’s how I keep up with them/decide/plan.
