It’s the first Meal Planning Monday of 2019!
I don’t know about you…but I’m caught in that place of “I should eat something super healthy to kick off the year” and “it’s cold outside, so please hand me the creamy, cheesy soup with sour cream on top”. Anyone else?!

My kids love, love, love it when I make my Easy Shrimp Fried Rice! Look at all of those veggies hiding in there with their supper. They gobble it all up every time!
If you use either the slow cooker or instant pot, you will have the chicken ready in no time flat to make my Corn & Chicken Quesadillas! Just add a side of guacamole and dinner is done!

For sheet pan suppers, how do you decide whether to mix everything together and spread it out on the pan or keep the ingredients portioned off seperately on the pan?

I tend to keep it separated because it’s easier for everyone to pick and choose what they want off of it when it’s time to eat.
