Meal Planning Monday #261

, Meal Planning Monday #261

It’s the first Meal Planning Monday of 2019!

I don’t know about you…but I’m caught in that place of “I should eat something super healthy to kick off the year” and “it’s cold outside, so please hand me the creamy,  cheesy soup with sour cream on top”.  Anyone else?!

Here are five suppers that hit a little bit of everything.  Perfect things to whip up when you stay in on these cold January nights.

Happy Monday, everyone! xo

Nothing is easier than a sheet tray supper!  My Lemon Chicken & Chickpea is simple to prep and even easier to clean up.  Loads of flavor, little work!

My kids love, love, love it when I make my Easy Shrimp Fried Rice!  Look at all of those veggies hiding in there with their supper.  They gobble it all up every time!

If you use either the slow cooker or instant pot, you will have the chicken ready in no time flat to make my Corn & Chicken Quesadillas!  Just add a side of guacamole and dinner is done!

We cannot have January without a roast.  Nothing smells better when you walk in the door after a busy day than a roast cooking away.  My Best Slow Cooker Roast will warm your whole family up!

I love, love, love a chicken pot pie! Tonight, make my Stovetop Chicken Pot Pie!  It is ready in no time and always delicious!

Looking for something a little sweet?  My Citrus Poppy Seed Olive Oil Cake is perfect with a cup of coffee on a cold day.  It’s light, it’s slightly sweet and it’s always a hit.

I hope you guys have a wonderful start to your week!  Sending you so much love! xo

For sheet pan suppers, how do you decide whether to mix everything together and spread it out on the pan or keep the ingredients portioned off seperately on the pan?

I tend to keep it separated because it’s easier for everyone to pick and choose what they want off of it when it’s time to eat.

Coincidentally, I have your roast planned for this Thursday too-how funny! Seemed like it was much needed now that we have a deep freeze settling on us in Boston!
