It’s the first official Meal Planning Monday of October!!

Okay, I am going to try and show restraint today and not make the entire meal plan pumpkin. #itsgoingtobehard I would eat “pumpkin” something for supper every night all month long, but I know some of you might not want to do that…so, it’s a good mix.
Today, I have a pumpkin recipe, a slow cooker recipe, an instant pot recipe, a meatless recipe and a fun fall Friday recipe.

On Monday, let’s have PUMPKIN! Tonight, my Chipotle Pumpkin Pasta should be on your menu. It’s full of flavor but not a lot of heat. It’s perfect for even your littlest eaters!
My Beer Cheese Brisket Sandwiches are the perfect Tuesday night slow cooker supper! You can make them slider sized or big sandwiches too. Either way you do it, you’ll be glad you did!
Mmmmm! I love Sausage, Peppers & Onions for dinner! If you don’t have an instant pot, no worries! You can make this version instead!

The butternut squash Mac and cheese looks amazing! My parents are coming over for dinner tomorrow and I am now planning on making it. I have two questions though.
1) At my grocery store they sell canned butternut squash purée. Just like Libby’s pumpkin. Would it work if I used that in my Mac and cheese?
2) Both my parents love shrimp. If you were picking one of your shrimp recipes to go with the Mac and cheese which one would you suggest?

Yes, I think that would be perfectly fine! Now, I personally don’t know if any of my shrimp recipes would compliment the mac and cheese. I would probably just grill it to go on the side!

We loved your instant pot sausage peppers and onions so much! we are new to the instant pot and I am now thinking about trying Mel from the Larson lingo’s recipe for Instant pot Korean Beef. Have you tried any of her instant pot recipes yet? Were they good?
