This week, I rounded up some more recipes with ingredients and proteins I seem to be able to find at my local store. All of them are easy to mix and match as well with whatever you can find. Sending you lots of love this Monday from my house to yours. xo
I love this Sausage & Cabbage Skillet!! It’s my wink and nod to a little German supper and always makes me happy!
Canned crab has been something we continue to find at our grocery store. My Corn & Crab Cake Burgers are fantastic this time of year (and easy too!). If you’ve never made a crab cake at home, it’s just like making a meatball…super, super simple!
My Mexi Meatballs over Rice is made with frozen meatballs! Super simple!!
We should all be making big batches of Andrea’s Pulled Pork to be enjoyed many different ways (you can see many of mine HERE) including Pulled Pork Stuffed Potatoes! You can use pork putt, pork shoulder, pork tenderloin…any of those larger cuts with this recipe.
Finish off your week with my Easiest Ever Shrimp & Grits! This is the perfect recipe for your frozen shrimp!
And if you’re looking for a simple dessert recipe, nothing beats my macaroons. This Easter version just makes me HAPPY!

Have you tried Making your Mexi meatballs over rice gluten free? I haven’t found frozen gluten free meatballs. Have you found any or are you making your own? Also if I make my own how should I adjust the cook time since they will not be frozen??Thanks!

I haven’t found gluten free meatballs that I like yet either. We’ve been making our own using Alexia g-free breadcrumbs. I would actually bake them off in the oven (400 degrees for 25ish minutes) and then assemble this on the skillet with homemade meatballs.

I have an air fryer question for you…mine just came and we are excited to try it out! How long/what temp do you do your Trader Joe’s cauliflower gnocchi on?

I do that about 350 for like 15 minutes. If you open it and they don’t look done enough for you, pop them back in a few more minutes!

Happy Monday! I bought some (uncooked) chicken sausages from Trader Joe’s over the weekend, and would love to cook them for my family sometime this week. Do you have any good recipes for these? I’m thinking I’ve seen you post something before, but would love your ideas!

I think you could do so much with those! If they’re uncooked, you can slit the casing and remove it (super easy, just run your sharp knife over it) and then brown it up to make a pasta, meatballs, lasagna…anything with ground sausage in it!

Hi I hope your having a wonderful day. I need some help with one of your recipes. I want to make your Mexi mac and cheese tomorrow. (I already have everything! yay! No crazy grocery store run?) I usually use trader joe’s fresh pasta in my gluten free recipes. but all I have is fresh spaghetti noodles. Should I cut those up into little pieces cook then and use them? or I have a box of gluten free pasta That I have never tried in my pantry. If you were deciding between the two which would you pick?
