You should totally kick off your week with my easy baked chicken recipe! Chili Lime Chicken with Pineapple Rice is a no-brainer for your Monday.
Are you using your air fryer? If so, make sure you try my Crispy Shrimp Salad! If not, I have an oven version on there too!
Have you made my Sweet Corn & Chicken over Wild Rice? This one is super simple to whip up!
This week, have “tostada Thursday”! My Roasted Red Pepper Tostadas are a fun alternative to taco night!
And finish off your week with my Mushroom Burgers. Red onions, mushrooms, and Gruyere cheese…YUM!
I’m really into easy little slab pies. This Strawberry & Blueberry Slab Pie is going to be the easiest thing you make all week (and it will get you in the spirit for the red, white and blue holidays!)!

Hi Shay! I tried a twist on your Trees and Cheese Quesadillas this week and put it on a tostada instead of between tortillas. It’s my new favorite!!! I think I had them 3x this week! Also, I just really like the name ?

for your Sweet Corn & Chicken Over Wild Rice do you really use four cups of wild rice? My store sells wild rice in 4oz boxes and Two of those is normally a lot of rice for me.

I’m serving six people and some big rice eaters, but you can totally scale that back if you like!!

We are having burgers tonight – thanks for all the dinner inspiration. Having everyone home (esp teenagers) makes it challenging to not only keep food in the house, but to also not eat the same thing every day. The teens will just heat up pizza rolls or chicken nuggets for every meal!

I use both of Colleen Rothschild’s! I like the serum in the AM and the cream in the PM.

Do you still offer your kids cereal for dinner if they don’t want what you make? Or if not when you did. Did you only offer the plain cereal so not sugar cereal like lucky charms? we are starting to struggle with our three year old at meal time.

Not after they turn five. After they turn five, they “get what they get and they don’t throw a fit” 😉 . Before five, I would say they could have something really boring like regular cheerios.
