Did someone say spring?!
This week’s meal plan is spring-inspired while also being a little cozy and warm since it is still March outside.
Grab your pad and pen, jot down your list and head to the store! It’s Meal Planning Day! xo
It’s Meatloaf Monday! Whether you make my Meatloaf using all gluten-free ingredients or not, you should make it! This is without a doubt Andrew’s VERY favorite dinner!
We love baking our tacos! This Taco Tuesday, whip up my Baked Chicken & Spinach Tacos!
I love, love, love leeks in the spring! My Leek & Corn Shrimp Pasta will be on regular rotation at your house!
Speaking of things I love, I love lemon in spring too! Try my Baked Lemon Chicken & Rice for a delicious spin on your typical chicken dinner.
And finally, wrap up your week Friday with a cozy bowl of my Buffalo Ranch Chicken Tortilla Soup. It’s not super spicy…it’s just very flavorful and delicious!
For a fun breakfast this week, try making my Super Easy Breakfast Charcuterie Board! This is easy enough to make on a school morning!
Happy Monday! I hope you have a wonderful start to your week!! xx

Oh Shay! I have your Buffalo Ranch Chicken Tortilla Soup in the crock pot RIGHT NOW! It’s already smelling so good! The ingredients & directions how to put it in the crock pot were so easy! It’s nor’easter weather here in Jacksonville, FL, so a perfect day for this recipe. We are really looking forward to it for dinner tonight!

We loved it! The chicken shredded much easier than any recipe I’ve ever tried! The soup was so thick & good. We have leftovers we’re planning to use for nachos later this week! Thank you for this great recipe!
