Anyone else excited for some sunshine?
This week, my meal plan is a little like the weather…bright and sunny some days and cozy and cool other days. I have a little grillin’ for you plus some heartier dishes. It’s a little bit of this and a little bit of that for the first day of the month. Happy April, everyone!

On my morning read through blogs, I instantly starting craving your enchiladas verdes after reading more about them. I cut the recipe in half and made them for myself last night and I am obsessed! I used Members Mark Avocado Salsa (from Sams Club- I think it is a salsa verde) and it was amazing!! I can’t wait to heat them up for lunch & dinner tonight! xoxo
