Happy Wednesday from Nantucket!
It’s the JUNE edition of Let’s Look!
If you don’t know what this is, once a month, Erika and I do a little link up where we “look” at different aspects of our lives (and then if you blog, you share and link up too!). We have been doing this little linky party for years now, and it’s always one of my favorite posts each month because most of the topics are YOUR suggestions!
In January, we looked at HOW WE ORGANIZE FOR THE NEW YEAR.
In February, we looked at WHAT WE EAT IN A WEEK.
In March, we looked at OUR FAVES FROM HIGH SCHOOL & COLLEGE
In April, we looked at HOW WE DO DATE NIGHTS!
In May, we looked at OUR HOMETOWNS!
And today, we’re looking at….GO-TO SUMMER LUNCHES!
Um…this week, my go-to summer lunch is…
…a lobster roll with fries and a gorgeous view of the Atlantic ocean, BUT on a normal summer day, my lunch looks more like…
…this or…
…this.
Whether it’s summer or not, I almost always have some sort of salad along with something else (wrap, meatball, sandwich, soup, etc) from my local grocery store or Trader Joe’s. I like a little something hot if I can help it…but a good and very flavorful salad with chicken is another fave of mine too.
Here are some of my go-to lunches this time of year:
1: Some sort of salad with chicken. I’ll almost always add something to it for a little zip…
…this one is great with an added bit of Buffalo sauce on top!
2: I love a chicken salad with crackers during the summer! My favorite one to buy is the curry version from Trader Joe’s. Even if you don’t think you love curry, I bet you’ll love this salad! My local grocery store makes a great chicken salad too that I often buy. Of course, when I make it at home, I almost always use a version of THIS recipe.
3: I will sometimes make a big batch of my mother-in-law’s pasta salad during the summertime for a quick and easy lunch. It gets better every day that it’s in the fridge, and we all love it, so that’s an easy thing to whip up and enjoy for days.
4: I love a wrap! I would rather make myself a wrap than a sandwich with bread. This one…
…my Buffalo Chicken Wrap is one of my favorite things to make (all of the ingredients are ones you probably already have on hand!).
5: One other easy lunch is sometimes, I just make myself a little charcuterie board. I’ll add turkey pepperoni, some cheese, a few nuts, maybe some grapes or blueberries with a few crackers. Sometimes, I’ll add some carrots and hummus or even pickles. This is such an easy way to enjoy lunch!
I mean…I’m pretty basic over here.
You all know that when I go to Chick-fil-a, my go-to order is always their cobb salad with a combo of their ranch and zesty Buffalo sauce. That is my FAVORITE thing to order there! I probably get at least one direct message a day from someone telling me they tried this combo and their life is changed. Try it. Get your life changed 😉 .
If you need other ideas for your summer…
…Shay’s Perfect Pasta Salads are a great option for lunch too! I also have several panini recipes for your lunch that you can find HERE as well!
I would LOVE to know what you eat for lunch during the summer for lunch! Any ideas would be SO appreciated! Please comment and share!!
Coming up this year on Let’s Look…
…next month, we will be posting our HOW WE KEEP HEALTHY!

Happy Let’s Look Day! My meals have been LACKING this week and I missed a Door Dash’d Chick-fil-A Cobb Salad for dinner last night so guess what I’m having for lunch? Can’t wait!

Hi Shay! I hope you and your family are having a blast! I’m just wondering if the Buffalo chicken wrap can be made in the morning around 5:00 , packed in a lunch and still be okay to eat @ noon? I’m not sure how it would hold up. I’m also wondering if you would heat the chicken or just leave it cold ? Have fun and be safe getting home.
Mix and Match Mama says
Yes!! I do think this one holds up well as long as you don’t add a ton of sauce. A little goes a long way when you’re making it early and enjoying it later. I would for sure just eat it cold. I hope you love it too!
Marla says
Thank you for responding so quickly.
God bless you and your family !

Lunch is my least favorite meal (even during the school year) so I can’t wait to see what everyone links so I can get some inspiration! Have fun in Nantucket and I loved following along during yesterday’s day in the life!

Love me a pasta salad. What pasta do you use for your mother-in-laws recipe? I find that the gluten free pasta I have used gets hard after it sits for a while. Like the idea of making a big batch to have on hand. Thanks!!!
Mix and Match Mama says
Trader Joe’s is my favorite g-free pasta!

What do your kids like to heave for lunch during the summer?
Mix and Match Mama says
They eat this stuff…pasta salads, wraps, sandwiches…stuff from Trader Joe’s. It’s kind of a hodgepodge!
Kara says
Enjoy the lobster rolls! I love to use Trader Joe’s cilantro and jalapeño hummus as a spread and wrap it up with avocado, lettuce, tomato and cucumber.

Chicken salad curry sandwich at Something Natural this week! 😍

Oh my goodness! I had the Chick Fil A cobb salad with ranch a buffalo sauce a few weeks ago and I’ll probably never have it any other way! It’s just so good!

What is your go-to ranch dressing for salads?
Mix and Match Mama says
It’s typically Trader Joe’s!

We love mini cucumber sammies! Slice a cucumber and throw some lunch meat/cheese/mayo/mustard etc on the cucumber and then add another cucumber to the top to make a little sandwich. Quick and light. Definitely my go-to!

I make your pasta salads every summer!
Mix and Match Mama says
