Happy Monday, friends!
We got home last night just in time to have dinner with the kiddos for Mother’s Day, so today, I’m going to get my life together and then, I’ll get back to you tomorrow.

This time of year, a sandwich and a salad is a great go-to meal at our house. They’re perfect for those nights when you don’t want to heat up your kitchen, yet you want something nice and filling. Well, you should try my Buffalo Chicken Paninis. They’re the perfect answer to your Monday!
This is like my favorite recipe. Seriously, when I’m asked what my favorites are, this one is always mentioned! It’s my Pasta with Bacon and Corn and for some reason, it just speaks to me. We use turkey bacon in our recipe, but you most certainly could use pork. It is light enough for May and perfect every time.
BBQ Chicken Rice Bowls are prepped in the slow cooker, so they make weeknight cooking extra easy!
My Bacon Jalapeno Popper Chicken Enchiladas have all the flavors of a bacon wrapped jalapeno pepper…but in entree form. And bonus, it’s really not too spicy for kids! It has loads of flavor without a ton of heat. You will LOVE this recipe!
And wrap up your week with my Caprese Turkey Burgers. They are best served on the patio 🙂 .

I made your mama’s corn salad (with the Fritos) for Mother’s Day lunch yesterday, and it was a huge hit! It’s the perfect side to sandwiches or grilled items like burgers or hot dogs. 👌🏼

Oh gosh, ours is forever old. I don’t even know? I think it’s from Target. It’s very basic and very loved over here.

I made your mother-in-law’s beef stew recipe on Saturday and had it left over on Sunday. Like most stews, it was even better on Sunday. So delicious! Forget the Queso bites as an appetizer… I would just eat all of them for a meal. I would sub white cheddar or a mix of cheeses for the Velveeta. There are things better than melted cheese, but the list is very short.

I would love a post one day of the gluten free brands you use as subs in your recipes… I try so many but it can be hit or miss. I love hearing what others have tried that works for them. Especially since you are creating recipes and are sure to notice pros and cons:-)
