Happy Monday, friends!
This Monday is super special for me because I have family in town! My grandparents, parents and brother and his sweet family all came to see us yesterday 🙂 . While I’m off having fun, I thought I’d share this week’s meal plan with you. My dinner ideas this week are EASY and won’t make your kitchen any warmer than it needs to be.
This is all I have for today, but I will see you right back here tomorrow 🙂 .
Here’s to simple meal planning (and a simple Monday!) for summer. xx

Keep the kitchen cool by firing up the grill! My Honey Chipotle Chicken is a perfect way to start your week!

You can make my Pepperoni Ranch Pasta Salad as a light supper, easy lunch or side dish with the chicken recipe above. Either way, it keeps well in the fridge and and doesn’t require you turning on the oven!
Speaking of which…

…it’s the perfect time of year to whip up my Chicken Caesar Rice Bowls!

Anyone else love them some crab this time of year? It’s such an easy protein to use on busy weeknights when you want to keep things SIMPLE in the kitchen! My Corn & Crab Pasta is a seasonal fave around here!

And wrap up your week with my Classic Cheeseburgers!
And since my sweet grandmother is on island visiting us this week, we should all make…

…her Strawberry Banana Pie! This is my all time favorite pie recipe. It’s AMAZING and you need to make it too. Bonus, it’s SO simple, light and refreshing. When I think of my childhood summers, I always think of this recipe.

If you’re looking for a bonus salad to add to any of this week’s recipes, don’t forget to try my Peach & Toasted Cashew Salad. It’s simple and seasonal for your June!
That wraps up this week’s Meal Planning Monday! I hope you all have a wonderful start to your week!

For the strawberry banana pie, do you use an 8 oz carton of cool whip or a 16 oz carton?
Thank you!

Shay,
My husband Wes and I just met you in Nantucket this past week. We were telling our friends back home in NC we met a lovely couple from Texas while we were there, and they couldn’t believe we had met y’all! They introduced me to your blog, so tonight I am making your easy Honey Glazed chicken and can’t wait to try more of your recipes. Thanks for being so kind to us in ACK. We will definitely be back!
