My kids are home today thanks to an unused bad weather day this school year, so it’s one of those weird Mondays that feels like a weekend.

My CHICKEN AND BROCCOLI FRIED RICE for the win this Monday! This is so simple to make that last week, my hubby even made it for our kids while I was out of town.
On Taco Tuesday, whip up my TACO MEATBALLS OVER AVOCADO MASH. So simple and so delish!
Speaking of simple, every time I make this SWEET POTATO & SAUSAGE HASH, I wonder why I don’t do it more often. It’s not only simple, it’s so yummy too! My family loves this with extra eggs on top (but you can certainly omit them if that’s not your family’s jam).
Our air fryer LIME PEPPER CHICKEN can also be baked in the oven (at 350 degrees for about 30 minutes). This one is so flavorful!
Wrap up your week with my BREAKFAST BURGERS! These are a really big hit at my house!
I love, love, love this ROASTED BROCCOLI SALAD! If you haven’t tried it before, now is the time!
