Happy Friday, friends!
It’s pasta salad season over here! I wrote out my grocery list for next week and included not one but two. They are great for lunch, as a side to any meal (especially grilled proteins!) or as light supper too. I love that you make pasta salads in advance (so easy for entertaining!) and that they only get better over time in the fridge. They’re easy, they’re colorful, they’re great for leftovers…they’re perfect all year but especially in the summer!

Which GF noodles do you think are best for pasta salads? And are they good for more than 1 day? I haven’t found a brand yet that is soft post day 1.

I find that whether I use Trader Joe’s or a Walmart brand, the key to “next day g-free pasta” is undercooking the noodles and then adding more EVOO before serving (it gives it a little boost).
