Hey there Monday!
Well, we’ve finally reached the end of our Spring Break 2025 recaps. Today is the fourth and final post recapping just the best, best, best week as a family.
Goodness, we had so much fun, and I just SO ENJOYED all of the time with my family.
We had such a wonderful time in St. Thomas and St. John that I honestly wouldn’t be surprised if we didn’t head there again next year. From beginning to end, it was a great destination for us.

On this day, we woke up on beautiful Lovango…
…and I went for a hike myself and then, we boarded another private boat for a second charter. This time, we stayed around the US Virgin Islands (USVI).
First stop, my teenage children wanted to see…
…Epstein Island. Our boat was able to get right up by it.
After that, we headed over to this super cute area…
…where not only could you snorkel and swim, but you could get pizza from this boat. How fun is that?!
Off my kids went with goggles and noodles to check out the sunken ship below.
We were having the best time!
We spent the morning boating from one beautiful spot to another. We would arrive, jump off, swim, snorkel (we saw so many sea turtles) and hop back on.
For lunch, we arrived at Lime Out which was EPIC! This was truly one of my very favorite memories from the trip.
This is a floating taco stand and bar. We jumped off our boat, swam up to one of the floating tables, ordered drinks and tacos and had an absolute blast.
They would float a table in the middle for you to put your drinks and food. So much fun!
After taco time, it was more gorgeous ocean swimming, snorkeling and floating.
We had a FULL and super fun day!
We cleaned up that evening and took the Lovango ferry from that island over to St. John. See beautiful Lovango behind us?

We enjoyed dinner and then headed back to our resort for a great night of sleep. We were wiped!
The next day was our last full day, and we decided to stay on Lovango and just enjoy not doing anything…
…I spied a ship from the Ritz Carlton Yacht Collection anchored just by Lovango. That smaller line is certainly on my “to do” list!

Last day on vacay!
…after a full day at the pool and in the ocean there off Lovango, we took the ferry one last time over to St. John for dinner…

We grabbed a cab and headed up to The Windmill Bar on St. John for sunset views. GORGEOUS!
I am so so blessed to call them mine.
We finished off with dinner and then had one more night on Lovango before flying home the next day.

I know this sounds like such a silly question but do you have photos of the taco stand meal? I was a little surprised to see Epstein Island on your blog this morning. That was kinda interesting. The trip overall looks wonderful!

I don’t have any pictures of it. I wasn’t brave/stupid enough to swim over with my phone but one of my teenagers was…so that’s how I got that one family pic. The tacos were delicious! It was so much fun to have a meal this way 🙂 .

Looks like a great trip! We are going to St. Johns in November. It has been on our list for a few years but just hasn’t worked out, but we are finally going. Lime Out has been referred to us by several friends that go, so glad to see that y’all enjoyed it too!

It’s not any longer. It’s privately owned by someone else. My teens know about Jeffrey Epstein from the documentaries that stream. I think conversations with teens about tragic events in history can be very valuable.

In an otherwise beautiful vacation recap, not sure the point of the shout out of Epstein Island, where it’s been well researched and reported that dozens if not hundreds of underage girls were held, sexually assaulted, and abused. And to call it out with no mention of the horror that was endured there. I understand the curiosity to want to see it, just not the promotion of it on the blog, and the lack of comment surrounding it.

It’s been purchased by someone else now and there was a lot of activity on the island, so it was interesting to see in person. I don’t condone what happened when he was the owner of the island (of course not!), but I also don’t shy away from places in history with terrible pasts. My kids have seen a lot of tragic places including a concentration camp. It always generates thoughtful family conversations. I think it’s really important, especially with teenagers, to have those conversations.

Lime Out looks like the most fun restaurant ever!! What a fun concept!! Okay, I have a million questions for you for how this place worked haha! Did the waiters swim out to take your order? Did you just swim to find an open table or did you have to make a reservation? It would probably have been my favorite place to eat!

The staff takes a little boat out each day, so they had on dry clothes. They made the drinks and the food in their kitchen on the boat and then they would put it all on a floating table and push it towards our floating seating area. You don’t make a reservation, you just show up and swim up (everyone swims up). If the “tables” are all full, there is a “bar” too where you order off the side and sit on little floating stool things. I wish I would have taken a ton of pics but my phone was on the boat because I had to swim. That’s why I bought the hat I’m wearing when I was sitting there (they had merch). The sun was bright and my hat was on the boat, so they floated me out a hat with my tacos. ha!

Ha, people on the internet are so quick to scold or judge. You Shay, handle it with much more poise than I ever would. I love what you said about discussing tragedy and history with our kids. Unfortunately, horrible things happen and I think open communication with our kids is the best thing we can do to keep them safe. We all know your heart <3 and your kids are an extension of that.
