Happy Monday, friends!
I don’t know about you, but I am loving all of my “May meals”. The food is lighter, we’re eating on the patio, the weather is lovely and the sun is staying out later. I just love this time of year.
I hope you had the BEST weekend and enjoy our easy Meal Plan! This week needs to be easy, easy, easy…so that’s what I have for you!

My Bacon Jalapeno Popper Chicken Enchiladas have all the flavors of a bacon wrapped jalapeno pepper…but in entrée form. And bonus, it’s really not too spicy for kids! It has loads of flavor without a ton of heat. You will LOVE this recipe!
BBQ Chicken Rice Bowls are prepped in the slow cooker, so they make weeknight cooking extra easy!
And wrap up your week with my Caprese Turkey Burgers. They are best served on the patio 🙂 .

I need to make that salmon bowl! And make a Trader Joe’s run too! I love a good slow-cooker meal for busy week nights! Those turkey burgers used to be on heavy rotation YEARS ago, I need to bring them back!! Also your pizza burgers! 😍

Hi! Okay random question, A box of couscous showed up in my walmart grocery delivery. I didn’t order it and am not sure what to make with it? Do you have any recipes that use pearled couscous?

I’m sure I do, but off the top of my head, I think you prepare it per the package directions and add a little EVOO and Parm and serve it like a cheesy rice with whatever protein you have. It’s so easy to use (like rice!). You’ll love it!
