Happy Monday, friends!
Today is MEAL PLANNING DAY here in blog world. I am sharing both a new TRADER JOE’S HAUL + BACK TO SCHOOL MEAL PLANNING TIPS as well as our weekly MEAL PLANNING MONDAY.
I don’t know about you, but I am my most organized, efficient, and enthusiastic meal planner self when the new school year begins. Later in the year, I will get bored, tired, and annoyed with having to feed my family every day, but right now, I’m loving it.
If you’re looking for some simple, easy to make, and delicious meals for your weeknight (plus two bonus breakfast recipes!), I have them below.
From my busy back to school kitchen to yours, Happy Meal Planning! xx

SAUSAGE AND BACON PASTA for the win! This one is always a hit at our house. It’s perfect for a Monday.
Instead of Taco Tuesday, this week try…

…EVEN EASIER WEEKNIGHT CHICKEN FAJITAS! You will make these again and again!

Cozy up on Wednesday night with my CHIPOTLE APPLE PULLED PORK! It’s so EASY!!! Your whole family will love it, and bonus, the slow cooker does most of the work!

Whether you serve my EASY BAKED MEATBALLS straight from the oven or make them earlier in the day and let them hang out in the slow cooker, they’re simple, delish and can feed a huge crew!
On Friday…

…fire up the grill and try my STEAK & WEDGE BURGERS! These are packed full of flavor and the perfect way to kick off your weekend.
For breakfast or a snack this week…

…it wouldn’t be Back to School season without PEANUT BUTTER! This week, bake my PEANUT BUTTER & JELLY BREAD! This bread is CRAZY good!
And finally…

…if you’re looking for a savory breakfast (it would be delicious for dinner too!), try my SAUSAGE & BACON BREAKFAST CASSEROLE.
Happy Meal Planning, friends! xx

Just made (and baked) the meatballs, then put them in the crockpot with marinara. Thanks for the recipe! 🥰
Looking forward to pulling out your cookbook soon with all of your fall recipes. I think I own all of yours and they make dinner SO easy during the school year!
