This recipe serves four to eight (depending on the size you serve).
Shopping List
2 (12 oz) bags of frozen blackberries, thawed
about 2 tablespoons of lemon zest
1/4 cup sugar
2 tablespoons cornstarch
1 cup of oats (not quick cooking)
1/3 cup brown sugar
1/3 cup flour
1/2 cup butter, chopped into small pieces
Preheat oven to 350 degrees.
Use either a cast iron skillet or a 9×13 baking dish.
In a mixing bowl, add your thawed blackberries (you can substitute with fresh!), lemon zest, sugar and cornstarch. Toss everything until it’s all mixed together. Pour this mixture across the bottom of your cast iron skillet (or across your baking dish).
Now, add your oats, brown sugar, flour and butter to your mixing bowl and toss together. Sprinkle this mixture down across your blackberry mixture.
Pop your skillet in the oven and bake 22-26 minutes or until the crumble is bubbly and slightly browned on the edges.
Remove from oven and serve immediately (maybe with a scoop of vanilla!).
Give me all the cobbler…and Olympics.

Ohh, how I wish blackberries weren’t so expensive where I live! The oatmeal crumble sounds SO good though. Might substitute blueberries instead! 🙂

Ugh I was feeling super guilty reading your workout post because I just ate to much pie last night!! Why does pie and the Olympics pair so well lol.
