It’s the first day of school.

This week…a theme! MEATLESS MONDAY, TACO TUESDAY, SLOW COOKER WEDNESDAY, TURKEY THURSDAY AND FAJITA FRIDAY!
If your kiddos are heading back to school today too, sending you much love! That first day is hard, y’all!
For your Meatless Monday, a Broccoli & Swiss Quiche. Quiche was always a staple recipe at our house growing up…and my mom always preferred it with Swiss cheese. Add a salad and dinner is done!
Taco Rice Bowls for the win on your Taco Tuesday! All the bells and whistles of a taco…in a bowl. Bam.
Mmmmmm! Thanks to store bought meatballs, my Slow Cooker Mushrooms & Meatballs over Pasta could not be easier! They cook up all day in the slow cooker making suppertime a breeze!
My Sweet Potato & Sausage Hash is one of my husband’s very favorite meals! We use turkey sausage in ours, but of course, you could use whatever you love most. This supper feeds a crowd and is always a winner at our house! Turkey Thursday for the win!
Nothing makes dinner easier than one of my Sheet Tray Suppers! Finish off Fajita Friday with my Chicken Fajita Taco Sheet Tray Supper. All you need are tortillas and dinner is ready to go!
For dessert this week…
…Fresh Apple Cake with Cinnamon Cream Cheese Frosting…because it’s beginning to look a lot like apple season around here!

Been struggling with my health for the past 6 months and was just diagnosed with Multiple Sclerosis. Fatigue is the most difficult symptom which means family dinners have suffered as I’m often too exhausted after work to cook. Liked your slow cooker recipes before but they are a true lifesaver now. I put the meatballs and mushrooms in the slow cooker before work this morning and dinner will be ready when we arrive home! Even if I have to lay down and rest I’ll be able to manage cooking some pasta noodles so the kids still get a healthy and hot meal. I should note that my husband does help but he’s an airline pilot and therefore not home every night for dinner! 🙂

Shay, I read Therese’s comment, and I stopped and prayed for her right then and there. God is near to her. So, the sheet pan fajitas is going to be on my list for this week. We buy the turkey breasts that you can bake from Costco, and you can make enchiladas or pretty much anything with the breast, but I’m going to do the fajita sheet pan meal!! AND the apple cake!! Thanks for the great ideas!

We tried the taco bowls last week and it was a big hit! Especially with my teenage boy. I haven’t tried any sheet pan meals yet, but those fajitas look very good!
