Happy Monday, friends!
Settle in, cozy up and get ready for some delicious meal planning! There’s a chill in the air and soup on my stove, it’s going to be a great week!
Growing up, my mom made a Beef & Veggie Pasta like this all the time. Every time I make it, it reminds me of being young and at home with my family.
It’s soup season! My Chicken & Wild Rice Soup is not only delicious, but easy too!
Have you tried my Baked Cheeseburger Sliders yet?! They are a-mazing!!! They’re exactly what you need to get you out of that Hump Day slump!
My Quick Chicken Stir-Fry is one of my kids’ favorites! Super simple and on the table in no time!
Mmmmmm! End your week with a big bowl of my Perfect Pumpkin Chili!! It is exactly what October calls for 🙂 .
And finish off your week with my Pumpkin Nutella Cupcakes! If you frost them, they’re a cupcake, if you don’t, they’re a muffin 🙂 . You should bake a batch stat!
I hope you guys all have a great Monday!! Sending you lots of pumpkin spice love from my kitchen to yours! xo

What vegetables do you recommend for the stir fry?
Mix and Match Mama says
Is it bad to say, maybe we don’t need another veggie if we load up the stir-fry with them???
Auntie Paloma says
Hey shay sorry if this is a bad question but what veggie side would you serve with your shrimp and grits? I have to on the meals plan but don’t know what veggie side to serve with it.
Mix and Match Mama says
Right this minute, roasted green beans sound good!! In the oven with olive oil, salt, pepper and then a little lemon juice after you pull them out. Easy!

Loved the pumpkin chili! I’m trying to embrace fall – this girl loves summer! Your chili had unconvinced I’m going to enjoy fall this year more than ever!

Do you think I could cut The muffin recipe in half? We are a family of 3 and 3 dozen cupcakes/muffins would be to much.
Mix and Match Mama says
Yes! You could also freeze half of the muffins and defrost later when you need more!

Ok so this may be a little weird but here it goes.
On my grocery pick up this week they substituted the Italian sausage I picked for chicken apple sausage. If you were picking one of your recipes that used sausage in it and trying to use to chicken apple sausage which would you pick?
Mix and Match Mama says
I love chicken apple sausage!!! I think you should make my sheet tray supper here: https://mixandmatchmama.com/2018/04/sheet-tray-supper-sausage-sweet-potatoes-brussels-sprouts/
Jamison says
That looks great thanks!
Jamison says
I love brussel sprouts but my kids and husband don’t what would be a good substitute? Sliced red pepper? Green Beans?
Mix and Match Mama says
Or asparagus too!
