Friends! Thanksgiving is going to be here before we know it!!
I’ve said this before and I’ll say it again, Thanksgiving food isn’t really my jam. I’m not a huge meat and sides kind of girl (I’m more of a lasagna or enchilada kind of a girl), so when I don’t get too excited about the main course, I LOVE PIE! Pie and cobblers are my very favorite desserts, so I get PUMPED when it’s time for Turkey Day dessert 🙂 . We always make pies in our family! Pecan, pumpkin, cherry, and more! We are pie people. I love making tons of pies for Thanksgiving dinner and then you get to eat them for breakfast for the few days after Thanksgiving. I mean, most of them have either fruit or pumpkin in them, so that’s completely healthy. Right?!

My MIL and I eat pumpkin pie with coffee and totally justify it as a vegetable serving the next morning 😉 .

We just made the Chocolate Chip Pumpkin Pie with Oreo Crust tonight for Thanksgiving dessert tomorrow. I wanted to share that we used a store bought Oreo crust and had extra filling that wouldn’t fit. So we took 6 silicone muffin liners, put an Oreo at the bottom of each, and filled them with the rest of the filling. We baked those about 15 minutes less than the rest of the pie, and we just sampled them. So good! I am definitely excited for the real pie tomorrow, but thought I’d share in case anyone else is using a store bought crust and has extra filling they don’t want to waste. Thanks for the recipe – I am not a huge fan of original pumpkin pie, because I think dessert should always have chocolate, but this one is right up my alley! Happy Thanksgiving!
