It’s the first official Meal Planning Monday of the Christmas season!!
We are going to BLINK, and it will be January, so we better take any little opportunity to make things merry before the season has slipped away! This week, I tried to add in a little bit festive and a whole lot of delicious into our meal plan. As always, it’s easy too!

Mmmmm! If you haven’t made my Chicken Tacos with Cranberry Salsa yet, now is the time! These are light and fresh, yet full of amazing flavors!! These are pretty to eat too 🙂 .
Okay, every Texas girl knows how to make Classic Chicken Spaghetti. My favorite part is that it’s easy to double and easy to freeze. It’s a great casserole for entertaining a crowd too!
We always make a big batch of some sort of “crack” every year because it keeps in the fridge all season long!! If you make my Peppermint Gingersnap Christmas Crack and then freeze it in a gallon-sized bag, then anytime you want some or need to get some out for entertaining, you just remove a little and in about 10 minutes, it’s ready to enjoy.
I’m finishing off my week with my Monte Cristo Breakfast Casserole! This is an AMAZING breakfast or brunch recipe or a yummy dinner too!

I would LOVE it if you’d make a post with a bunch of your favorite winter dinners, similar to the fall slowcooker dinners post that you had a few months ago. I’ve referenced that Fall post so many times, and many of our Fall dinners have been from there (or similar recipes of my own, but I used your suggestions as inspiration). A winter guide would be SO helpful! ??

Made your cranberry brisket sliders this weekend and they are fantastic! I had shredded pork from Costco on hand so used that in place of the brisket and was so easy. Served with heated up frozen corn (added some butter and fresh cilantro) and the dill pickle chips from Trader Joe’s. A huge hit with my son’s 12 year old buddies! Thank you for the great inspiration!
