It’s the first day of SPRING!
To say I have a spring in my step would be an understatement 🙂 .
What better way to start the new season than with an easy and delicious meal plan for busy ladies like us who also love a little variety and lots of yummy spring flavors.
Cheers to you and me and a fresh new season.
Happy Spring! xx
My Crispy Lemon Turkey Cutlets are the perfect way to kick off spring! This is so simple and always a hit at my house!
It’s Tomatillo Tuesday! (That’s a thing, right?!) These Tomatillo & Spinach Chicken Enchiladas could not be simpler (and super flavorful too!)!
I always love to share my Strawberry Jam & Goat Cheese Turkey Burgers with you this time of year because they’re crazy unique and oh so delish. Instead of a heavy bacon cheeseburger, fire up the grill, sit out on the patio (if you can!) and try this lightened up version of a burger.
Pineapple Teriyaki Salmon because…#itsspring!
If you’re not making risotto at home, you should! It’s oh so easy and always feels special. My Lemon Risotto with Pancetta and Peas is like spring in a bowl.
And for a yummy breakfast this week, try my Monte Cristo Breakfast Casserole! It’s like the classic sandwich but for breakfast. This one is A-MAZING!
For a little sweet treat, my Lemon Coconut Macaroons are perfect for spring! I would pick one of these over a plain old cookie any day of the week.
And just for fun, make Andrew’s Espresso Martini 🙂 .
Happy Spring! xx
The Monte Cristo casserole is a huuuuuuuuuuge hit in my house and for potlucks at my school! We love traditional breakfast casseroles, but they all taste the same after a while. THIS one is something different, and everyone raves about it. We warm up some syrup and serve a little over the top. DELICIOUS! 🙂
