It’s the first day of SPRING!
To say I have a spring in my step would be an understatement 🙂 .

For a little sweet treat, my Lemon Coconut Macaroons are perfect for spring! I would pick one of these over a plain old cookie any day of the week.

The Monte Cristo casserole is a huuuuuuuuuuge hit in my house and for potlucks at my school! We love traditional breakfast casseroles, but they all taste the same after a while. THIS one is something different, and everyone raves about it. We warm up some syrup and serve a little over the top. DELICIOUS! 🙂
