Hey there Monday! We meet again.
This week, I have five simple suppers that can be made in-between carpool, homework, and after school sports. Easy, simple and delicious!
Spinach & Swiss Meatballs over Quinoa is the perfect way to start your week! If your family isn’t into quinoa, sub with rice or even pasta!
On Tuesday, make a double batch of Andrea’s Pulled Pork. On the first night, make Pulled Pork Sandwiches and then on the second night…
…make Pulled Pork Stuffed Potatoes.
Next up, make my Shrimp Carbonara. This is my kids’ FAVORITE kind of meal! Shrimp and noodles make them HAPPY!
And round out your week with my Jalapeno Popper Burgers on Friday. Seriously, the topping on this burger is AMAZING! You can just make that and enjoy it with chips!
Looking for something sweet this week? How about this…
…my Banana Cream Pie. My favorite dessert is a piece of pie…and this one will have you saying me oh my!
And if you’re looking for a quick breakfast, lunchbox treat or even a snack…my Bacon & Chive Muffins will do the trick!

I was really excited when you had done one meatless day but it seems like you’re back to meat everyday and adding more meat to things that don’t even need it (muffins)??? You had said you were making an effort to eat less meat, is this going to be reflected in your family meal planning? I’m just curious because my family is vegetarian and I love your recipes when I can adapt them.

I do a meatless Monday from time to time and you can always click on “vegetarian” on the sidebar to locate other meatless dishes. That being said, I do tend to put meat in almost all of my Meal Planning Mondays because I have more meat recipes than meatless. And trust me when I say…a little meat in a muffin is really good if you’re a meat-lover 😉 . (For meatless muffin recipes, click on breads/muffins!)
