You know what really screws me up?
A holiday on a Wednesday.
I mean…right smack dab in the middle of the week.
Also…I’ve always thought that July 5th should be a holiday too…because it’s very hard for me to get motivated the morning after July 4th. Between the food, fun, friends and fireworks…I’m in no mood to you know…adult the day after.
Sigh.
That being said, here’s a Meal Planning Monday to help us cope with this crazy week. Four (EASY!) suppers, a burger recipe for your Fourth, a yummy side, appetizer and dessert for your holiday too. Let’s do this, Monday.
We have been out of town and away from our beloved Tex-Mex these last few weeks, so we are kicking things off with easy (and flavorful!) Flank Steak Tacos. There is really nothing complicated about this recipe at all. It’s perfect for a Monday night!
