As February starts to slip away, I get a little panicky and want to consume #allthecozy food while I still can!!

Tomato Basil Soup, anyone? It’s like Kensington’s favorite thing to eat! You could serve it alone or with my Bacon Marmalade Grilled Cheese Sandwiches!
Ohhhh! We love anything “stroganoff”! My easy Slow Cooker Beef Stroganoff is just right for your Tuesday!
Have you made my Honey Pecan Chicken Thighs?! You can totally sub with chicken breasts too. No matter how you make it, just do it. This week. Stat!
We serve our Spinach & Swiss Meatballs over Quinoa, but you can absolutely sub rice, pasta or any other grain. We love meatballs on busy weeknights!
And wrap up your week with my Enchilada Elbow Bake! Doesn’t that just look DELISH?!

Do you have any recipes that use Escarole? I got a bunch at the farmers market last weekend and am trying to find a recipe that will use it up.
