We serve our Spinach & Swiss Meatballs over Quinoa, but you can absolutely sub rice, pasta or any other grain.  We love meatballs on busy weeknights!

    Do you have any recipes that use Escarole? I got a bunch at the farmers market last weekend and am trying to find a recipe that will use it up.

      You need to saute it down into a pasta. Maybe one with sausage? Yum! I love escarole!!

    Oh man, my husband is not a chicken guy – he will only do thighs/dark meat – so that honey pecan chicken looks DIVINE. Making that ASAP!!

    Eating a big bowl of the Enchilada Elbow Bake right now! Everybody, this is a great recipe – so easy, a little bit different, and really good. Don’t forget to save some green onion and sour cream for garnish. Everybody in my family loved it. Thanks for this one, Shay
