Coming off a three day weekend, I need to get up, get going and get my life together.  Here’s hoping this makes your week just a little easier.  Happy Meal Planning!

Bacon, Mushroom & Swiss Quesadillas

My Bacon, Mushroom & Swiss Quesadillas are perfect on their own (with sautéed veggies inside) or you can omit the bacon for a yummy meatless meal!

Taco Stuffed Potatoes

This is Taco Tuesday with a twist!  My Taco Stuffed Potatoes are are delicious way to end your Tuesday!

Broccoli & Swiss Quiche

For Wacky Wednesday…eggs 🙂 .  My mom used to always make a yummy quiche for supper (served with a salad).  My Broccoli & Swiss Quiche always reminds me of my mom!

An Easy Turkey & Rice Skillet is a one pot wonder for your Turkey Thursday!  Who doesn’t love a Thursday?  It’s like a Friday Eve 🙂 .

BBQ Apricot Grilled Chicken

And end your week with Fabulous Friday.  My BBQ Apricot Grilled Chicken pairs perfectly with the patio.

    My grand-daughter and I made the Buttery Peeps Bars for Easter. She had so much fun making them and they are delicious! Much better than I thought they would be. I also made the broccoli and swiss quiche last wee. It was so good-my husband raved about it! I went to Aldi’s to get cheese and they had a swiss/guyere shredded mix so I used that instead of just swiss cheese. It turned out great! Thanks for sharing your recipes!
