Hey, hey 2022!
I’m back friends, and I’ve missed you all!
I don’t know about you, but today, the kids go back to school and we go back to “normal” after 2.5 weeks of holiday bliss. And by bliss, I mean eating a lot of yummy, seasonal, and probably not the healthiest food. If you’re like me and you need a quick reset this week, I have a cozy, quick, wintery meal plan to get you back into “normal” dinnertime.
I’m also doing something new this year, I’m going to (try) and add a grocery list to each week’s meal plan to hopefully simplify things a bit. It’s a work in progress, but hopefully, it will make your meal planning even easier. You’ll see it attached to the bottom of this post.

Yup. Let’s start our week with my Easy Minestrone Soup. Your entire family will love this hearty Tuesday supper!
My French Onion Roast was one of the most popular recipes from last winter! Your entire house will smell delicious after a long day with this easy dinner bubbling away. Plus, is any recipe more “winter” than a roast?!
We absolutely love a hash! My Sweet Potato & Sausage Hash is super simple and full of yummy flavors. We use a turkey sausage to keep this a little lighter too.
Have you made my Sausage & Lentil Chili yet?! Friends, it’s so delicious! If you’ve never cooked with lentils before, this is the perfect recipe for you to start with. This is easy and super flavorful. You will make this one on repeat!
Now, I know this pic isn’t very fab, and I totally need to re-photograph this recipe, but I wanted to remind you that one of my favorite breakfast recipes are these easy Protein Pancakes! If you’re looking for a protein punch to start your day (one even your kids will love!). This recipe is for you!

Welcome back!! When you get back from a trip or vacation, what do you do to reset? Did you work out while on this trip? I live in Michigan, so it’s always freezing and snowy here right now! Its so much harder getting steps in this time of year for me!

I did workout (in a gym, not outside because of the temps!) while I was on vacation! I slept in a bit more, I read a ton, didn’t hardly watch any TV and stayed off my phone and computer (especially my email!). It’s always good to take a rest from the “norm”. Cold weather DOES MAKE IT SUPER HARD to get your steps in! I tried running in the cold in Utah and my lungs were burning!
