Happy Monday, friends!
We are right smack in the middle of the month which means, I have #allthefall things to do over the next 10 days. There are movies to watch, places to go, people to see and fun to be had which means, I don’t have time to meal plan. I’m guessing you don’t either which is why today, I have five easy dinner ideas plus three bonus recipes to make your week simple.
Have a great start to your week! xx

My Pancetta & Pumpkin Ravioli is the easiest way to kick off your Monday! Seriously, this is super, super simple!

Speaking of simple, if you’re needing a really easy weeknight supper, you totally should make my Easy Weeknight Frito Pie! It’s one of my family’s very, very favorites!
Mmmmmm! We love a Sweet Potato & Sausage Hash! It’s so simple for busy Wednesdays!
BBQ Cider Sliders are also so simple because the slow cooker does all the work!

And finally, finish off your week with my Perfect Pumpkin Chili! Friends, you will want to make this one again and again! Don’t be intimidated by “pumpkin” in your chili. Trust me, this one is delish!!
For breakfast this week, try my…
… Blender Pumpkin Bread! This is crazy easy and oh so simple!
If you’re looking for an EASY dessert to make this week, I have Pumpkin and Chocolate Chip Brownies! These are so yummy and perfect for your October week!

I know crazy but I’ve never made the frito pie before, but I’m going to put on menu this week for a busy night. I was wondering if you’ve ever used say sloppy Joe instead for a different version?
Mix and Match Mama says
You totally could sub that for this version!

How often is a family favorite meal/dish on your menu rotation? My widowed sister lives with us and doesn’t eat any seafood. So, it’s lots of chicken and ground beef! It’s a challenge to not make the same meals every couple weeks.

I would say that I typically make dinner five nights a week and 2 to 3 of those nights are “family favorites” and then the other nights are new recipes/things I’m trying out. I do always try to only make things my family really loves and stay away from dishes that perhaps aren’t their favorites as I want mealtime to be as enjoyable as possible. It’s much easier now, but when they were younger, Kensington really only loved ground beef and Smith only loved chicken…so one of them was always a bit disappointed. They grew out of that though, so things are much easier now.
