I just love a breakfast casserole.
They are delicious.
They can be made in advance.
They are perfect for a crowd.
They reheat beautifully.
They’re filling.
They can be mixed and matched a million different ways.
And they include yummy things like sausage. And bacon. And cheese.
Yes. Please.
I love breakfast casseroles all year long, but there’s something extra yummy about them in the winter.

I have made the casseroles without soup in them and they are all good. But, The Fall Leaves Sausage Migas Breakfast Casserole is an all time favorite–The BEST!! LOVE LOVE this casserole!!! I made it at least 3 times last fall, And after seeing it again, I am going to make one this morning. Still loving Tab’s guacamole so might have some of that with it. YUMMMMMM!! Happy Friday!

I love a breakfast casserole, but it seems like I cannot get my eggs to be done all the way. Any tricks?

Are you baking it long enough? All of my casseroles cook 45 minutes to an hour. Maybe that’s it?

I make the three cheese/sausage casserole (the ones with Texas Toast croutons) about once/ month. My 18 year old son eats it for breakfast all week long. Sooooo tasty!

I’m not usually a huge fan of breakfast casseroles because they all start to taste alike. HOWEVER your Monte Cristo casserole is the EXCEPTION! I take it to every potluck breakfast / brunch (I’m a school teacher, so we have those A LOT.), and it is always declared the winner! It is soooooooooooooooo good! Thanks for the idea! 🙂

These casseroles look so delicious! Do you think I would be able to make any of these in my slow cooker? I’ve been waiting for over a month for a part to come in to have my oven fixed, so I’ve been using my slow cooker a lot! I have made other casseroles in my slow cooker and just wondering if one of these would easily convert to a slow cooker recipe?
