Happy MAY, friends!!!
I know I say this every single year, but you guys, I LOVE MAY!
The weather gets warmer, the food gets lighter, the schedules start morphing from “end of school year” to “beginning of summer”. The rain leaves for sunshine, dinners are on the patio, it’s beautiful in the morning when you’re walking the dogs…it’s just such a great month 🙂 .
Every May 1st, I share thirty-one of my best “May meals” for you to enjoy all month long. These suppers are all simple, all seasonal and all family faves. There is no need to fuss with dinner, I have your May covered!

I am divorced, 65, empty nester. Your meals may be designed for families but a lot of them are great to make on a Sunday afternoon and eat for dinner for several nights. By the time I get home from work it is really great to just put enough out to warm up for dinner. Lots of them warm up really well. After cooking for all these years, I’m tired of coming up with new recipes and I am to lazy to want to cook a fancy meal for just me. Your food is good, healthy, and not complicated recipes. Thanks for helping someone who really isn’t in your demographics.

This is the post I’ve been waiting for! We’ve got baseball starting next week for our oldest (we play “summer” ball in Iowa) + the craziness of the school year ending as a teacher, so I’m in need of dinners that are e-a-s-y to pull together!
